In Search of Saltfish
Sasha traveled to Kingston the last week of February to learn more about Jamaica's so-called national dish: Ackee and Saltfish. From cookbooks at the National Library to trade accounts at the Jamaica Archives and Records Department and from newspaper microfilms at the University of the West Indies Mona Library to the flora and fauna at Coronation Market, she sampled the country's culinary history to learn more about its relationship to cod and Canada and to the North Atlantic and salt.
