September Salt Studies

To make fish in Newfoundland you need two ingredients: cod and salt. In search of how these two entangle—and how they even define the culinary cultures of a nation where the former is far from local—Sasha spent September researching Portuguese codscapes. From Porto and Aveiro to Ílhavo and Lisbon, she learned from and with salt farmers, chefs, historians, and—thanks to "The Built Ocean" conference, where she shared stories about Fogo Island cod cultures—architects.
