Pepe at the Museum

On the last day of the longest month of the year—which is obviously to say January—Pepe led a fermentation workshop at the Museum Brot und Kunst (the Museum of Bread and Art) in Ulm. Starting with kecheck el fouqara, what it is, its geographies, variations, and names, she demonstrated how to make this “poor man’s cheese” from just bulgur and salty water. The participants left the workshop with jars of golden goodness to bring home, one to ferment and the other ready to indulge in.
